TS Foods Cod Goujons & Lemon Mayonnaise serves four
20 mins to prepare, 30mins to cook / 361 calories per serving
800g skinned and boneless cod
200g TS Foods plain bread crumbs
100g Neil’s plain flour (seasoned with salt and pepper)
3 Skea eggs beaten
Juice and zest of 1 lemon
Slice fish into fingers/strips.
In a large bowl toss strips in seasoned flour.
Dust off excess flour and add strips to beaten egg mixture.
Remove strips from egg and toss strips in the breadcrumbs, ensuring strips are evenly coated.
Fry in hot oil for 4-6 minutes (or drizzle with olive oil and place on a hot baking tray in the pre-heated oven) until golden brown.
Whisk lemon juice and zest with mayonnaise.
Serve in a bowl alongside cod Goujons.
